Quiet Elegance: How Design Command Reimagined The Sushi Co with Japanese Minimalism

Design Command, the multi-award-winning interior architecture studio renowned for its innovative hospitality spaces, was brought on board to shape a new design concept for one of the UK’s fastest-growing sushi brands.

The Sushi Co, celebrated for its Minutes Fresh Sushi and live kitchen experience, is redefining fast-casual dining with an authentic, approachable take on Japanese cuisine. As the brand expanded across London, the brief to Design Command was clear: create an elevated yet understated interior that enhances the freshness and craft behind the food, while remaining true to the brand’s roots in simplicity, quality, and warmth.

Inspired by Japanese design principles, the new aesthetic introduces soft wood finishes, a calm colour palette, and layered textures. Archival prints have been reworked into bespoke wallcoverings, while Zen-inspired fabrics upholster seating, enhancing comfort and refinement. Bamboo planting brings a sense of freshness and contrast to the clean, minimal layout.

The design is grounded in the philosophy of kintsugi, with an emphasis on quiet detail and natural materials. The overall effect is relaxed and considered, supporting a slower, more focused dining experience.

The concept has been rolled out to sites in Hampstead, Harringay Green Lanes, and Canary Wharf, with Tower Bridge opening soon.
